How to Make Soup With All Those Hudson Valley Apples
This is a bumper year for local apples and nothing tastes better than one picked right off the tree at a local orchard. You can make pies and cider with them, but have you tried apple soup?
Before you know it we are going to be up to our necks in apples and there are only so many that you can just munch on. I love apple pie and apple cider, but there are other ways to enjoy our number one crop. Valley Table has a great recipe for Apple Soup. That's right, hot Apple Soup that is creamy and not overly sweet.
The recipe contains carrots, peppers, tomatoes and kohlrabi, which is in the cabbage family and tastes a bit like broccoli stems. You also use a 1/2 cup creme fraiche, so as you can see this is a gourmet recipe. Of course there are lots of variations for Apple Soup. Check out this video.
